Instructions

Step 1: Prepare the Beans

If Using Dry Beans:

  • Rinse 1 cup of dry black beans under cold water and soak them overnight in a large bowl with enough water to cover them by 2 inches.
  • The next day, drain and rinse the beans before cooking.

If Using Canned Beans:

  • Drain and rinse 2 cans of black beans. Set aside.

Step 2: Cook the Beans

Stovetop Method:

  • Heat 1 tablespoon of olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sautéing until fragrant and golden (about 3-4 minutes).
  • Stir in the soaked (or canned) black beans, bay leaf, broth, salt, and black pepper.
  • Bring to a boil, then reduce the heat to low and let it simmer uncovered for 1-1.5 hours (for dry beans) or 20-30 minutes (for canned beans), stirring occasionally.
  • If using smoked sausage, add it during the last 15 minutes of cooking.

Instant Pot Method:

  • Set the Instant Pot to Sauté mode and heat the olive oil.
  • Add the onion and garlic, cooking until softened.
  • Add the soaked (or canned) black beans, bay leaf, broth, salt, and black pepper.
  • Secure the lid, set the valve to Sealing, and cook on High Pressure for 25 minutes (for dry beans) or 10 minutes (for canned beans).
  • Allow a natural release for 10 minutes, then manually release any remaining pressure.

Step 3: Prepare the Brazilian Garlic Rice

  • Rinse 1 cup of long-grain white rice under cold water until the water runs clear.
  • Heat 1 tablespoon of olive oil in a medium saucepan over medium heat.
  • Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Stir in the rinsed rice, coating it evenly with the oil and garlic.
  • Add 2 cups of cold water and ½ teaspoon of salt.
  • Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the water is absorbed.
  • Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

Step 4: Assemble and Serve

  • Spoon the Brazilian black beans over a bed of Brazilian garlic rice.
  • Garnish with fresh cilantro or parsley and a squeeze of lime for a zesty finish.
  • For an authentic touch, sprinkle with cassava flour or serve with a side of Pao de Queijo (Brazilian cheese bread).
